The Perfectly Easy and Healthy Summer Lunch: Homemade Acai Bowls

Summer is almost here and to celebrate, I am sharing with you one of my favorite go-to lunch recipes: homemade açaí bowls. It’s easy. It’s healthy. It’s yummy….checks all the boxes!
You can also mix up the recipe to your liking and make it into a smoothie if you are on the go. I often add some protein powder and granola to my bowls. You can switch up the fruit and toppings as well….think pineapple, mango, kiwi, bananas, coconut shavings, Nutella, cocoa nibs…the sky is the limit!
What you’ll need:
blender
2 acai packets - I use the Sambazon brand and you can usually get these in the frozen food section at most grocery stores. Each bag comes with 4 packets.
1/2 c juice - I like cranberry juice, but you can choose just about any juice and it will still taste great
1 c frozen fruit - my go to is mango or pineapple, but once again, you can choose anything you prefer
any added mix in - protein powder, chia seeds, matcha, etc
Options for Toppings:
fresh fruit
granola
Nutella
almond butter
coconut shavings
cocoa nibs
local honey
Instructions:
Take your açaí packets and let them thaw just a bit. You can speed up the process but sitting them in a bowl of warm water for a few minutes. In general, I like the açaí to still be fairly frozen. Add the açaí, juice, frozen fruit, and any added mix-in and blend until fully smooth. (If I add in a protein powder or other mix-in, I often have to add extra juice to get the mixture bendable and softened.)
Pour into a bowl and load on the toppings.
Take a picture (because it is beautiful!) and enjoy lunch!
